Pietra del Cabreo sits inside the vineyards — literally surrounded by the vines of the Tenute del Cabreo estate, just 1km from Greve in Chianti. The Folonari family opened it in July 2021 after restoring an ancient rural settlement on their land. This is your home for the week.
The Folonari Legacy
The Cabreo estate was purchased by Nino Folonari in 1967 and covers around 60 hectares. Today it is led by Giovanni Folonari with his wife Giovanna and daughters Francesca and Angelica. The estate’s name lives in two wines: Cabreo La Pietra, a 100% Chardonnay that was the first white SuperTuscan, and Cabreo Il Borgo, a Sangiovese, Cabernet Sauvignon, and Merlot blend produced since 1982.
The Rooms
Eleven rooms — junior suites, family rooms, deluxe bedrooms — accommodating up to 26 guests. The restoration used local Km-0 craftspeople, and you can feel it: cotto dell’Impruneta floors, oak, wrought iron, antique family pieces. Nothing generic. Everything has a hand behind it.
Restaurant Cabreo
Lunches are lighter — homemade pasta, ragù, classic Tuscan recipes. Dinners reinterpret traditional Chianti flavors with modern creativity, served in a glassed-wall veranda that opens fully in summer. A hands-on cooking school with the Cabreo chefs is also available.
